Crunchy Breakfast Tacos

True story:  We have been serving up delicious food at markets and festivals for years now.  We led with our Grilled Chicken and PIneapple sandwich, which, honestly, is still my favorite.

Last year, we added the Peri Peri Tacos, and people love them! 
They out-sell the sandwiches as people just love tacos, period.

and now this!! 

We perfected the Breakfast Taco, brought it out with us several weeks ago and what do you know....we sell more of these than the other two combined.  People love tacos and they love breakfast. 
The Peri Peri sauce is the perfect flavor with eggs,
so this is truly a match hatched in heaven.

Crunchy Peri Peri Breakfast Tacos

Ingredients (1 Servings = 2 Tacos)

8 oz. marinated, cooked and diced Peri Peri Chicken (Mild, Medium or Hot)
1/2 red onion, diced very small, carmalized
Cheese of your choice (we use provolone)
2, 6 or 8 inch tortillas
2 eggs
 

1. Marinate chicken for 48 hours in Peri Peri Marinade, then Cook, Bake, Grill or Smoke chicken until done.

2.  Dice chicken into small pieces and put on skillet/griddle

3. Baste with Mild, Medium (Wing sauce) or Hot

4. Crack the eggs on the grill and cook
(you can scramble them or leave them as fried eggs,whichever you like better)

5.  Place tortillas down on griddle

6.  Layer cheese, chicken, onions, eggs and allow to cook until cheese melts

7.  Fold in to tacos and serve with Peri Peri Yum Yum sauce!
