Peri-Peri Chicken Salad

Peri-Peri Chicken Salad is

This is the time of year we start looking at our waistlines
and thinking of getting ready for spring and outdoor fun. 

But, uh oh, what about all those cookies I ate last night?  LOL

When we start getting "healthy" in our house,
we spend one day making several items to have
on hand and this is always the first one. 

Peri-Peri chicken salad. 

It has all the protein, carbs and fat you need for a complete meal. 
If you want to stay carb (bread) free,
serve it over a bed of spring mix and you're good to go.


6 chicken breasts, marinated in Peri-Peri marinade
1/2 cup red onions, diced
1/2 cup banana peppers, diced
1/2 cup walnuts, chopped
1/2 cup dried cranberries
1 - 1.5 cups Peri-Naise

Mix all the items together.

Adjust the amount of Peri-Naise to fit your desired consistency.
